Banana & Pumpkin Seeded Muffins

These Banana & Pumpkin Seeded Muffins are the perfect wake up recipe, filled with lots of cruch and energy these are the best way to start your day!

Ingredients

  • 125g wholemeal flour
  • 125g plain flour
  • 2 teaspoons baking powder
  • 100g dark brown sugar
  • 1 handfull of pumpkin seeds
  • 1 handfull of sultanas
  • 100ml oil
  • 4 bananas, mashed
  • 2 eggs
  • 2 tablesppons of milk

Instructions

Oven and Equipment

  1. Heat the oven to 180c/fan 160c/gas 4. Line 6 holes of an oiled non-stick muffin tin with squares of greaseproof paper.

Muffins

  1. Mix 125g wholemeal flour, 125g plain flour, 2 tsp baking powder, 100g dark brown sugar until well combined.
  2. Fold in a handful each of pumpkin seeds and sultanas
  3. Add 100ml oil, 4 mashed bananas, 2 eggs and 2 tbsp milk, mixing well until the mixture is fully combined.
  4. Divide the mixture between the muffin holes. Fill them to the top.
  5. Sprinkle on a few extra pumpkin seeds as you please.
  6. Bake the muffins for 20 minutes, or until cooked fully through.
  7. Transfer the muffins onto a wire rack to cool completely.
