These Banana & Pumpkin Seeded Muffins are the perfect wake up recipe, filled with lots of cruch and energy these are the best way to start your day!
Ingredients
- 125g wholemeal flour
- 125g plain flour
- 2 teaspoons baking powder
- 100g dark brown sugar
- 1 handfull of pumpkin seeds
- 1 handfull of sultanas
- 100ml oil
- 4 bananas, mashed
- 2 eggs
- 2 tablesppons of milk

Oven and Equipment
- Heat the oven to 180c/fan 160c/gas 4. Line 6 holes of an oiled non-stick muffin tin with squares of greaseproof paper.
Muffins
- Mix 125g wholemeal flour, 125g plain flour, 2 tsp baking powder, 100g dark brown sugar until well combined.
- Fold in a handful each of pumpkin seeds and sultanas
- Add 100ml oil, 4 mashed bananas, 2 eggs and 2 tbsp milk, mixing well until the mixture is fully combined.
- Divide the mixture between the muffin holes. Fill them to the top.
- Sprinkle on a few extra pumpkin seeds as you please.
- Bake the muffins for 20 minutes, or until cooked fully through.
- Transfer the muffins onto a wire rack to cool completely.
