Chocolate Chip & Peanut Cookies

Fancy a tea break? Or maybe just a little treat? These perfect cookies are here simply for you to enjoy and indulge.

Ingredients

  • 180g butter, at room temperature, cubed
  • 3/4 cup (165g) brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 300g (2 cups) plain flour
  • 1 tsp bicarbonate of soda
  • 200g salted roasted peanuts, roughly chopped
  • 200g dark Choc Bits

Oven & Equipment

  1. Preheat oven to 170°C or 150C fan-forced.
  2. Line 2 large baking trays with non-stick baking paper.

Cookies

  1. Use electric beaters to beat the butter and sugar in a medium mixing bowl until pale and creamy.
  2. Add the egg and vanilla essence, and beat until combined.
  3. Sift the flour and bicarbonate of soda together over the butter mixture and use the beaters on a low speed to mix until just combined.
  4. Add the peanuts and choc bits, and use a large metal spoon to mix until evenly combined.
  5. Place heaped tablespoonsful of mixture about 5cm apart on the lined trays. Use your fingers to flatten each until about 1.5cm thick.
  6. Bake biscuits in preheated oven for 10 minutes.
  7. Swap the trays around and bake for a further 7 minutes or until the edges of the biscuits begin to turn light golden.
  8. Remove from the oven and cool on the trays for 5 minutes before transferring to wire racks to cool completely.
  9. Repeat with the remaining biscuit mixture.
