Ingredients
- 180g butter, at room temperature, cubed
- 3/4 cup (165g) brown sugar
- 1 egg
- 1 tsp vanilla essence
- 300g (2 cups) plain flour
- 1 tsp bicarbonate of soda
- 200g salted roasted peanuts, roughly chopped
- 200g dark Choc Bits

- Preheat oven to 170°C or 150C fan-forced.
- Line 2 large baking trays with non-stick baking paper.
Cookies
- Use electric beaters to beat the butter and sugar in a medium mixing bowl until pale and creamy.
- Add the egg and vanilla essence, and beat until combined.
- Sift the flour and bicarbonate of soda together over the butter mixture and use the beaters on a low speed to mix until just combined.
- Add the peanuts and choc bits, and use a large metal spoon to mix until evenly combined.
- Place heaped tablespoonsful of mixture about 5cm apart on the lined trays. Use your fingers to flatten each until about 1.5cm thick.
- Bake biscuits in preheated oven for 10 minutes.
- Swap the trays around and bake for a further 7 minutes or until the edges of the biscuits begin to turn light golden.
- Remove from the oven and cool on the trays for 5 minutes before transferring to wire racks to cool completely.
- Repeat with the remaining biscuit mixture.
